   ## What is the purpose of the change
   
   This PR makes the `DataStream` & `DataSet` conversion to a `Table` independent from Calcite.

   It is based on #8404

   c8001558d361e4f69a75b141adcb85fb1610bd31 - should be squashed with ea32cadeb2ce12caaabcc34eded44cb06eacbda7 before merging. I separated it to make the review easier, as it contains a lot of simple adjustments to the test base that will comply with new internal behavior that is covered in ea32cadeb2ce12caaabcc34eded44cb06eacbda7
