   ## Motivation
   
   For some operations like update, the payload could need to be embedded in a "doc" JSON object which makes the migration from `camel-elasticsearch-rest` more complex.
   
   ## Modifications
   
   * Add the new component option `enableDocumentOnlyMode` to be able to switch globally to a mode that allows the same body content as the legacy component `camel-elasticsearch-rest` to ease the migration
   * Add the new header `enableDocumentOnlyMode` to be able to switch per request to a mode that allows the same body content as the legacy component `camel-elasticsearch-rest` to ease the migration
   * Add more doc about the specific behavior of the update operation
   * Fix all the tests that don't use requests that don't need to be embedded in a "doc" JSON object
