Quarto would be my personal preference because of the multi-programming language ability (i.e., runnable examples) and because I'm already using it for the SedonaDB docs.

Do we have a setup for multilingual pages? We may want to consider changing our docs from mkdocs-material to something else (maybe that has a native setup for this), since mkdocs-material is now unmaintained.

Yes, the setup is already in the main Sedona repo: https://sedona.apache.org/latest-snapshot/

I am looking at the Zensical option, which is from the MkDocs Materials team directly: https://zensical.org/compatibility/
