### Describe the bug, including details regarding any error messages, version, and platform.
I'm building/running a non-R Docker image and I get warnings about an unset variable:
```console
$ archery docker run conda-cpp-valgrind bash
[ ... snip ...]
[+] Building 1/1
✔ conda-cpp-valgrind Built 0.0s
WARN[0000] The "R_UPDATE_CLANG" variable is not set. Defaulting to a blank string.
```
