[PR] [core] Support DATE, TIMESTAMP and TIMESTAMP_NTZ in variant shredding schema [paimon]
juntaozhang opened a new pull request, #9230:
URL: https://github.com/apache/paimon/pull/9230
### Purpose
This PR wires the missing pieces so that `DATE`, `TIMESTAMP_WITH_LOCAL_TIME_ZONE` and `TIMESTAMP_WITHOUT_TIME_ZONE` can be used in Variant shredding schema.
### Tests
- `PaimonShreddingUtilsTest#testAssembleAllTypes` now covers `DATE`, `TIMESTAMP`, `TIMESTAMP_NTZ`, `FLOAT`, `BINARY`.
- `InferVariantShreddingSchemaTest#testInferSchemaWithAllPrimitiveTypes` now covers the same primitive types.
