Since splitting the crates, we were only running MIRI on what remained in the top-level crate (very little).
This PR updates the MIRI CI to run on just the low-level crates, where UB is most likely to manifest. We could cover all the crates, but figured I'd just get the baseline coverage back

Benchmark runs are scheduled for baseline = 57f79c03a8dee9d8bf8601bf555aa271746913fe and contender = 350867436ab3477bafd7008355286378ab37045f. 350867436ab3477bafd7008355286378ab37045f is a master commit associated with this PR. Results will be available as each benchmark for each run completes.
