This is still an issue in 5.4. Translations for "Today" and "None" are now shipped with Tapestry, but the Chinese l10n is incomplete: https://git-wip-us.apache.org/repos/asf?p=tapestry-5.git;a=blob_plain;f=tapestry-core/src/main/resources/org/apache/tapestry5/core_zh_CN.properties;hb=HEAD
As for the weekdays, would it be correct to use the last character (e.g. '一') as an abbreviation?
