I did not add a mechanism to add/change data but it's easy to do manually (in files specialpurpose/pos/screens/default/dialog/PaidIn*.properties specialpurpose/pos/screens/default/dialog/PaidOut*.properties). 
Perhaps if really needed later we will add one ( but in this case we need a generalised  tool...)
