[PR] NO-ISSUE: drools-and-kogito package unable to checkout old commits [incubator-kie-tools]

The previous code would clone the repo to a specific branch (`buildEnv.root.streamName`), but that branch was meaningless because the checkout would use a specific git reference.
The new implementation clones the default branch, with the smallest depth possible (to make it faster), and then fetches and checks out the specified git ref.
