I'm weak on Tomcat configuration, but I think I've done what you're asking: I've added the 10.40.0.27 IP address to the Connector in /var/lib/tomcat7/conf/server.xml
As for what port to proxy to for the app: 8080
As for the name to configure on the proxy: preferable would be tapestry.apache.org (so that all requests to https://tapestry.apache.org starting with /hotels would go to our app). Let me know if that isn't possible.
