Goal are:
 # Ensure user can rely on its JSON-Java mapper implementation
 # Reduce the size of the dependency tree for that concern (openapi generation) but still use camel integration with the rest DSL

If it helps we can extract the model from [https://github.com/apache/geronimo-openapi/tree/master/geronimo-openapi-impl/src/main/java/org/apache/geronimo/microprofile/openapi/impl/model] in its own jar
