Connector-specific client overrides were added in [KIP-458|https://cwiki.apache.org/confluence/display/KAFKA/KIP-458%3A+Connector+Client+Config+Override+Policy], but that feature is not enabled by default since it would not have been backward compatible.

But with AK 3.0.0, we have the opportunity to enable connector client overrides by default by changing the worker config's {{connector.client.config.override.policy}} default value to \{{All}}.
