Start with Apple:Software Update, or the "softwareupdate" CLI program.

Server Admin (part of Server, also available as part of Server Admin Tools <http://www.apple.com/downloads/macosx/apple/serveradmintools104.html>), offers a good GUI for the Mac OS X firewall, but under the covers it's really IPFW from FreeBSD, so "ipfw list" and the like work fine.

For security, I suggest avoiding Apple Remote Desktop, which is VNC-based, and transmits keystrokes in cleartext; unfortunately, it doesn't tunnel well inside ssh.

OSXvnc provides a good VNC server for Mac OS X, and can be double-clicked (to launch graphically) or run from the command-line if desired; either way, it's ssh-friendly.

Mac OS X Server 10.4 "Tiger" also includes an IPsec VPN server, FWIW.
