I'm looking on maven central (the default maven repository):
   https://search.maven.org/search?q=javafx-archetype-simple

This indicates, that 2.0.0 was published yesterday, which would explain why it was not present when I tested. If 3.0.0 was released a few minutes ago, that would explain why central does not have it yet (I saw OSSRH -> central mirroring happen in minutes, but also waited hours).

For the location, yes I can see them in the samples category. I would not do a complete refactoring of the Samples. Maybe we could just add a "OpenJFX" folder. As OpenJFX is the successor of the (bundled) JavaFX, that would be explainable.
