I just downloaded the latest thrift source, and followed the README to get all the prerequisites....
I'm running on ubuntu-8.10..
It apparently requires the python dev package (It was complaining about missing the header file 'Python.h')...
So, installing the ubuntu package 'python2.5-dev' solved the problem.
The README, and perhaps also the wiki page, should be updated to mention this dependency....

You might be interested in THRIFT-71. We (Fluidinfo) are also providing Ubuntu packages through our PPAs:
https://launchpad.net/~txamqpteam/+archive/ppa (stable)
https://launchpad.net/~esteve-fernandez/+archive/ppa (experimental features)
Some packages are being built for Hardy and Intrepid right now, but will become available in ~30 minutes.

If you are not using Python, you can run "./configure --without-py" to skip it.
Unfortunately, there is currently no way to install the pure Python libraries without building the C extension module. This is possible to fix, though, if there is demand for it.
