Proposal to release the HTTP connector version 1.0 and 2.0

Hi all,
I would like to propose that we release a version 1.0 of the HTTP connector that works with Flink 1.20.3. I volunteer as the release manager.

I would also like to propose that we release a version 2.0 of the HTTP connector that works with Flink 2. I volunteer as the release manager. I plan to use the soon to be released flink-connector-parent v2.0.0 as the parent, for this,

@Ferenc Csaky<ma...@pm.me> I am happy if you would like to be a release manager with me on this. I would like the experience, but am happy to work with a more experienced release manager for the first time,

    Kind regards, David.

Hi David,

Thanks for driving this. +1 for releasing v1.0.0-1.20 and you as release mgr.
I think the connector release wiki [1] is pretty straightforward, just make sure
to do the 1-time prerequisites and ask a PMC member to include your GPG key
to the KEYS file [2].

For the v2 connector release, we should also bump Flink version to 2.x, and see
if we can throw away some code (e.g. any SinkFunction), and then do a v2.0.0
for Flink 2.1 + 2.2.

WDYT?

Best,
Ferenc
