Any good guide on how to compile and install Guacamole as a NON ROOT user?

I do know some basics on how to do it but any official reference guide you
may point me out to would be really appreciated!
I've found some on Google but anything that comes from you guys I would
trust it more.

Not docker, just running it in a regular ubuntu server. Correct. Well, I
have to update my Linux skills then.

Compilation and running are separate things. You shouldn’t need anything special to run as a non root user, just some Linux skills. 

Modify your unit file to specify a service user without interactive login privileges, and ensure they have permission to access whatever folder you have set to $GUACAMOLE_HOME. 

guacd binds a higher number port, that you don’t need root privileges to run. 

If you’re talking about docker, just read up on creating a rootless rocker container.
