Extend the ParquetIO Sink Builder to accept an Avro data model that can then be passed to the AvroParquetWriter.
This is needed to better specify the GenericData model in case is needed to read/write Avro GenericRecord. AvroParquetWriter set by default the SpecificData model, which could create inconsistencies when reading GenericRecords with a GenericData model.

My initial idea was to fallback to the previous behaviour, so in case the exception is raised the model will be the default one set by the `AvroParquetWriter` class, which is the `SpecificData` one

Which could be a non-sense since if a user specify a model this is silently failing and setting a different model. So I think you are right this should cause the pipeline to fail

My initial idea was to not modify the previous behaviour: in this case if the exception is raised the model will be the default one set by the `AvroParquetWriter` class, which is the `SpecificData` one

Yes but my concern is that we have a little bit different builder's API for Read (returns `GenericData`) and Write (returns `Class<? extends GenericData>`) parts. Well, I think we can leave it at "it is" since only `withAvroDataModel(GenericData model)` is a public user's API and it's the same for both parts.
