I have implemented the fix and opened PR https://github.com/apache/hbase/pull/8557:

The patch makes WALKeyValueMapper use the source-to-target table mapping for multi-table composite keys and configures bulk HFile generation with the mapped target table descriptors and region locators.

It also extends TestWALPlayer with a source-to-target bulk-load regression test using a pre-split target table, so the test verifies both the target output path and the target table region boundaries.
