I *think* I've found it but Shaz if you can confirm that'd be good :)

1. Select project
2. Select target
3. Click Build Phases
4. You can set stuff per-file under Compile Sources.

It looks like it adds:
{code}
settings = {COMPILER_FLAGS = "-fno-objc-arc"; };
{code}
.. to the pbxproj file, under PBXBuildFile section, for the particular file.
