Marking this resolved, kind of.   CXF 2.6 was tested with the latest Jetty 7.5, 7.6, and 8.1 versions.   We added a bunch of reflection code into the jetty transport in order to handle the various differences between the versions.  We stuck with 7.5 as the default as 7.6 has several incompatibilities that made it not work with other projects we generally work with (Camel, Karaf, pax-web, etc...) which could cause all kinds of issues for users.
