Currently it's possible to start/stop a task, once stopped it is not possible to restart with same parameter or resume.

That would be nice that a new command like restart and/or resume would exist. At the moment the only workaround is to recreate the task with same parameter , eventually to use the information from the status of the stopped task to find the resumeFrom  value to use in the new created task.

All this is not so trivial, so having it in the RCP tooling directly may help.
