[I] Investigate and fix Nightly jobs failing due to a docker error [incubator-kie-issues]

The Nightly pipelines are failing when running `docker squash` command.
A quick look in the logs showed that the docker version was updated from 24.0.7 to 25.0.1.
Investigate what is causing the error and fix it.
