Italian is choosen
I received a file, it is in Italian and I have to modify it
I work on it, when I try the spelling check it always look for ENGLISH,
I change the default language to Italian (I tried bot on "apply only to this
document" and not flagging) but nothing change, the program always perform the
check in English
no way to ask for the check in Italian

Thanks for the screenshot. The setting "Lingue predefinite per i documenti -
Occidentale" is for new documents only.
In existing documents you need to change the language in the character styles
(see menu "Format - Character" tab "Font").
Please note that the document can contain more than 1 character style. Then you
need to check the language setting in every character style. Here the "Styles
and Formattings" dialog can help (press [F11] to open). When opened click on
the "Character Styles" icon and select "Applied Styles" in the drop-down-box
below. Via right-mouse-click you can open the dialog for the respective style.
