[I] Phase 21: Create a HoodieSchema to StructType converter [hudi]

### Task Description
**What needs to be done:**
We want to make a converter HoodieSchema to/from StructType and add thorough testing for all of the schema types. The scope of this task will be limited to the converter and not the integration of it into other parts of the code.
**Why this task is needed:**
We need the ability to convert directly from HoodieSchema to StructType for use in the Spark code path as part of our migration to HoodieSchema
