[I] Update the documentation website [datafusion-ballista]

**Is your feature request related to a problem or challenge? Please describe what you are trying to do.**
The website uses a bit outdated dependencies, and unlike the docs of Datafusion, it does not provide a dark mode option.
**Describe the solution you'd like**
As the official Datafusion docs and the Ballista docs seem to share ancestry, I would like to update the Ballista docs website to bring it more in line (and most notably, enable the optional dark mode)
**Describe alternatives you've considered**
None, I just pointed an LLM at both repo's who provided an analysis, and it's a small update of dependencies and a bit of CSS changes due to some API changes.
**Additional context**
N/A, really this is just because I would like to read it with dark mode.
