[jira] Closed: (JAMES-278) Remove references to Jakarta where no longer accurate

Changes were made in the src/xdocs, but not committed in the actual website.  Nothing too major, and want to just remove errant references in what's bundled in a distribution as I think the website is unaffected by these changes (since done from MAIN branch).
