[PR] Kafka Connect: Fix CVE-2025-55163 in grpc-netty-shaded [iceberg]

Fixes #14983
This PR upgrades `io.grpc:grpc-netty-shaded` from version 1.71.0 to 1.75.0 in the kafka-connect-runtime module to address CVE-2025-55163 (Netty MadeYouReset HTTP/2 DDoS Vulnerability).
## Changes
- Added forced version upgrade for `io.grpc:grpc-netty-shaded:1.75.0` in kafka-connect/build.gradle
## Testing
- Built and scanned the kafka-connect-runtime distribution with Trivy
- Confirmed no HIGH or CRITICAL vulnerabilities remain
- Verified grpc-netty-shaded-1.75.0.jar is included in the distribution

IIUC it's coming from `com.google.cloud:libraries-bom:26.73.0` and pulling in 1.76.2:
