Address review feedback: fix default User-Agent and add conflict validation

- Changed default User-Agent from 'flink-http-connector' to 'flink-connector-http' as suggested by davidradl
- Added validation to detect conflicts when User-Agent is set both explicitly via config and in headers
- Updated documentation to reflect the correct default value
- Added test cases to verify conflict detection for both sink and lookup operations
