[PR] ci: enable RustFS stdout logging in docker compose [iceberg-rust]

kevinjqliu opened a new pull request, #3279:
URL: https://github.com/apache/iceberg-rust/pull/3279

   ## Which issue does this PR close?

   Follow up to apache/iceberg#18246.

   ## What changes are included in this PR?

This sets `RUSTFS_OBS_LOG_STDOUT_ENABLED=true` on the object store, matching the other Iceberg repos (iceberg, iceberg-go, iceberg-cpp). It defaults to false and the image logs to `/logs`, so `docker logs` is empty otherwise, which makes CI failures hard to debug. Everything else here already lines up.

   ## Are these changes tested?

Tested with `docker compose config` and by running `rustfs/rustfs:1.0.0` with this setting: logs show up in `docker logs`.

   - Prompt Summary: Align RustFS docker compose config with the other Iceberg repos
