### Description
Currently, the Fluss Quickstart documentation references the `rustfs/rustfs` Docker image using a floating tag such as `latest`. This practice introduces reliability concerns, as unversioned tags hinder consistent environment reproduction across deployments and complicate troubleshooting when underlying image contents change without notice.
To improve stability and reproducibility, I recommend specifying a fixed versioned tag, such as `1.0.0-alpha.83`, in the documentation. The version can be updated periodically after the community validates compatibility and stability with the latest Fluss releases.

Actually, just realised that the title includes `remove the rustfs-init`, I am assuming that this is a typo and the intention is to remove the latest tag @wuchong ?

@leekeiabstraction I did encounter an issue where `rustfs-init` hangs during initialization, but this was likely caused by using a platform image that doesn't match the expected architecture or environment.
