Turning off XML PI

(I'm a brand-newbie here so apologies if this is a FAQ)

How can I turn off the

         <?xml version="1.0" encoding="UTF-8"?>

processing instruction that XSLTProcessor.process() insists on 
printing.  My output isn't XML :-)
